Fenton’s NY Style Pizza Dough. Makes two 12” pies.

Ingredients

Directions

  1. Mix together: 10 oz warm water, 1 pack instant yeast, 1 tsp sugar and Let bubble.
  2. In stand mixer add: 70 oz 00 flour, 1/3 cup olive oil, 1 tsp salt, 1 tsp sugar.
  3. Add yeast/water to flour and knead in stand mixer for 6 minutes (add teaspoons of extra flour if a little too wet and is sticking to the sides of the bowl)
  4. Let rise in greased bowl covered with a damp tea towel for 1 hour
  5. Punch down dough and split in half
  6. Put halves is separate greased bowls for 4-5 hours covered with damp tea towel.
  7. Preheat oven to 500° with pizza stone or sheet pans in oven
  8. Spread dough on parchment and top with whatever toppings you want.
  9. Bake until crust is brown and middle cheese is melted and bubbling. About 15 minutes.
